Thai Fried Rice

Preparation

  • Heat oil in a pan over medium heat, add minced garlic.
  • Stir until golden brown.
  • Add prawns, stir occasionally until nearly cooked.
  • Add diced carrot and minced shallot, stir until carrot is cooked through
  • Add cooked rice, pinch of salt, 1 tsp sugar, pinch of white pepper, 1 tsp fish sauce, 1 tbsp oyster sauce and pineapple chunks.
  • Add spring onions and stir until all ingredients are well mixed (about 2-3 minutes).

Top with fried cashew nuts and dried raisins.
Garnish with coriander and serve with lime wedges.
