Conchiglioni with meat fricassee

Preparation

  • Brown the chopped onion in a pan, then add - in sequence - the sausage meat, beef, and veal.
  • Cook for about 4 minutes.
  • Pour in the Marsala and let it reduce.
  • Add the veal stock and Mascarpone cheese, season with salt and pepper, and finish cooking.
  • Drain the Conchiglioni, toss them in the pan with the sauce, and add the Parmesan cheese.
